Tomato Sauce
Mum's homemade tomato sauce.

Ingredients
3 kg
Tomatoes, firm, ripe, roughly chopped. You can use over ripe ones but it will take a lot longer to cook.

Onions, medium size. Peeled and roughly chopped.

Apples, medium, unpeeled, cored & chopped
1¾ cups
White Vinegar
2 tbsp
Salt
750 g
Sugar
½ tsp
Pepper
¼ cup
Lemon Juice
1 tsp
Ground Cloves
1 tsp
Ground Allspice
1 tsp
Ground Ginger
Lemon Rind, Thinly peeled from 1 lemon.
Method
- Put the tomatoes, onions and apples into a large pot.
- Cover and bring to the boil.
- Reduce heat and simmer for ½ hour until the apples are squishy.
- Let cool for a short time and the push mix through a sieve or mouli.
- Return to pot and add all remaining ingredients.
- Stir over until the sugar melts.
- Boil gently for 1 ½ hours until the sauce reduces and thickens. Leave longer if the tomatoes were very ripe.
- Remove lemon rind, pour into sterilized bottles and seal.
